When it comes to street food, nothing beats the sandwich, at least not at the newly opened Sánguche restaurant in Montevideo. The establishment, unsurprisingly named ‘sandwich’, albeit in Spanish, occupies a fully redeveloped unit on the ground floor of a low-rise building with an ornate façade in the downtown Cordón neighbourhood. The interior design, created by local local multi-disciplinary practice CRUDO, features a contrasting understated aesthetic with a strong industrial edge, using a palette of galvanised steel and PVC in a bright yellow hue. Furnishings are few, simple, and last but not least functional. Crafted by local design company Taller Capitán, comprise an elongated sales counter with matching stools, in addition to a series of tables and chairs.

The aforementioned PVC is in bright yellow and demarcates the storage space on the ground floor and the mezzanine floor production space. Lighting comes in the form of an elongated tubular light fixture which dangles over the service counter and embedded ceiling lights. Outside, on the pavement, additional seating is available when weather permits. Mind you, Sánguche faces the Feria Tristán Narvaja, a thriving open-air street market which is held on Sundays, and as such, it’s required to adapt to continuous flow of people. The menu at Sánguche lists a variety of richly layered sandwiches with beef, chicken and additional toppings and sauces, all paired with french fries or salads.
