The days of generic hamburgers are, luckily, long gone. For quite some time now, inner cities across large swathes of the planet have witnessed a new phenomenon—the gourmet burger parlour. Obviously, Copenhagen is no exception. Founded six years ago, occupying a former gas station in the heart of the Danish capital, the aptly named Gasoline Grill banked has banked on the growing popularity of its artisanal, organic burger, growing into a network of downtown restaurants, and keeping matters fresh and grounded, a rentable, fully-equipped food truck. For the opening of its sixth downtown restaurant, Gasoline Grill collaborated with local architecture practice Studio David Thulstrup. The dining venue sits on the ground floor of a stately structure built in 1901 and sees an understated interior design with a freestanding open kitchen and counter. The counter top and flooring comprise of sand-tinted terrazzo flooring, and this somehow ties in with a range of sturdy oak stools, designed in collaboration with German design company e15. A suspended canopy of galvanized steel hovers over the kitchen, and while it blends with kitchen furnishings below, it also offers an interesting contrast with the existing arched ceiling. As said, Gasoline Grill offers its avid following organic burgers, but not only that. The buns, fries, all garnishes and drinks are organic.
