previously part of a large hospitality chain, the dolphin hotel in surry hills changed ownership, re-emerging in a funky guise that better befits the neighbourhood's artsy edge. entrepreneur maurice terzini, a veteran in the flourishing hospitality scenes of both melbourne and sydney, introduces a bold new concept that also sees the most audacious transformation of this famed watering hole. local architect george livissianis was enlisted to supervise the project and collaborated with the venue's newly designated artist-in-resident beni and installation artist tracey deep along the way.
the dolphin hotel now features three distinct spaces spread over three floors, including a dining room, wine room and a public bar, in addition to an outdoor terrace. the venue, originally built in 1934, has been given a makeover in a pop-up manner, applying re-use and re-adaptive design principles, and making use of many of the structure's original elements, such as exposed bricks and cement flooring. the result is a series of refreshingly eclectic settings that fuse history and modernity, thanks to the omnipresent artsy interventions. conceptwise, the dolphin hotel is an extrapolation of the melbourne wine room, one of terzini's previously owned establishments, but takes the food and drink experience to a whole new and adventurous level.
