when hakkasan's first establishment opened in london a little over a decade ago, it caused quite a sensation with refined chinese cuisine served amidst stunning modern design by french architect christian liaigre. now grown into a hospitality group, hakkasan successfully introduced the brand abroad and diversified its activities with other restaurant formulas. its latest venture is a collab with japanese superchef yoshihiro murata, and it's called chrysan. murata is acclaimed as the master of the ultra-refined kaiseki cuisine, and he is the third generation chef patron of kikunoi, a century-old ryotei restaurant in kyoto, which holds no less than three michelin stars. murata trained in france and on his return to japan, introduced new techniques and influences that more or less redefined classic kaiseki cuisine. murata owns a second restaurant in kyoto and a third in tokyo, and these have two stars each, making him a record holder in his home country. accommodated in an elongated ground floor space at broadgate west, a newly redeveloped office complex in the city, the restaurant's interior design by kyoto-based designer and carpenter yoshiaki nakamura is a subtle fusion of traditional japanese and contemporary elements.
the dining room seats 100 guests, including the chef's table seating eight with views into the kitchen. additionally, there's a private dining room that can accommodate 12, and a bar seating 30 guests. the menu at chrysan is anchored by murata's protégé daisuke hayashi, himself an emerging talent of the next generation of japanese chefs. hayashi balances tradition, delicate flavours and exquisite presentation with genuine innovation. as you can expect, the menu introduces a new style of japanese cuisine to london's refined palates. in addition to an extensive à la carte offering, chrysan features a signature kaiseki course menu at dinner, as well as a special ‘crystal box’ lunch set for lunchtime diners. in october hakkasan will launch another restaurant, inspired by chinese banqueting tradition, right next door. location: 1 snowden street [city].
